number one song after number one song...

Today I woke up and baked the most delicious spelt muffins.
lemon poppyseed, baked to perfection.

Then I fell in the shower and bruised my ass.

Now, may I just raise a point here...

WHO DOES THAT OTHER THAN PILL-POPPING HOUSE WIFES, OLD LADIES, OR OUT-OF-WORK ALCOHOLICS???

no one just "falls" in the shower. But I did. Took the shower curtain with me and everything. Perhaps I shouldn't really care so much, except it actually hurt/annoyed me so much that I've been thinking about it all day long.

well, that combined with Lindsays arrival, the amount of homework I need to motivate myself to do, and the fact that I am finished school in roughly 2 months.

and by "done school" I definitly mean FOR GOOD.

LEMON POPPY SEED MUFFINS
Makes 12 muffins

2 cups spelt flour
11/2 tbsps. poppy seeds
1 tbsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2 large eggs
1 cup soy milk
1/2 to 2/3 cup light brown sugar, or to taste, packed
6 tbsps. butter/margarine, melted, plus more for greasing the muffin cups
juice/zest from 1-2 lemons (depending on size...I used 1 medium sized lemon but wished they were more lemony)
1 tsp. vanilla extract

Place a rack in the top third of the oven and preheat oven to 400 degrees F. Butter 12 standard muffin cups. Set aside. In a large bowl, combine flour, poppy seeds, baking powder, baking soda and salt.

In a medium bowl, lightly beat the eggs. Whisk in buttermilk, brown sugar, butter, lemon zest, lemon juice and vanilla extract. Don't be concerned if the mixture looks curdled or lumpy.

Stir wet ingredients into dry ingredients until most of the flour is incorporated. Do not overmix. The mixture can be slightly lumpy. Divide batter among prepared muffin cups.

Bake until muffins are golden brown around the edges and a wooden toothpick inserted in the centre comes out either clean or with a few crumbs attached, 11 to 13 minutes.
